Description –
Powerful and very jammy, this crystalline solid has a lovel raspberry-jam, deep character that can be easily pushed in the direction of other fruits when used in combination with other materials. It also works well as a sweetening agent.
Usage -
Arctander says: “This ketone is used in perfume compositions, particularly in Jasmin, Gardenia, Tuberose, etc. where floral notes need fruity undertones, or where fruity notes need fixation and supporting delicate sweetness. One known Jasmin speciality contains a considerable proportion of this material in its ‘fruit- preserve-like’ undertones and terminal notes.” Jean Claude Elena, in his book Diary of a Nose, suggests that in combination with beta-Ionone and fructone this material can produce an effective illusion of the smell of raspberries. He says “Unlike cherries, which have more taste than smell, raspberries are all about smell … Adding cis-3-hexenol gives a sour, green quality, while geraniol will give a taste of lipstick.”
